Creamy Spinach Stuffed Chicken

It’s been a quick minute since I cooked an entire meal and it was a huge hit among everyone at the table. Talk about a total #momwin in my book!🤩🤤🥰

What To Use:

  • 4 chicken breasts (I used 5 for our fam!)

  • 1 tablespoon olive oil

  • 1 tesapoon paprika

  • 1 teaspoon salt

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • 4 ounces cream cheese (room temp is best for mixing)

  • ¼ cup grated Parmesan

  • 2 tablespoons mayonnaise

  • 1 ½ cups chopped fresh spinach

  • 1 teaspoon minced garlic


Steps To Take:

  1. Preheat oven to 375 degrees.

  2. Place the chicken breasts on a cutting board and drizzle with oil.

  3. Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine.

  4. Sprinkle evenly over both sides of the chicken. 

  5. Use a sharp knife to cut a pocket into the side of each chicken breast.

  6. Set chicken aside.

  7. Add cream cheese, Parmesan, mayonnaise, spinach, garlic, and remaining ½ teaspoon of salt to a small mixing bowl and stir well to combine.

  8. Spoon the spinach mixture into each chicken breast evenly. I placed toothpicks in each chicken to help keep them closed so the cheesy mixture wouldn’t ooze right out!

  9. Place the chicken breasts on a large cookie sheet with raised edges (to prevent spilling.)

  10. Bake, uncovered, for 25 minutes or until chicken is cooked through.
