Chocolate Chip Cookie Infused Brownies

Y'all will thank me later for this one. DELICIOUS. Some days I like to share healthier recipes with you. Today is not one of those days. OBVI.

Are they a brownie?

Are they a cookie?

A sugar bomb?

Yes to all of the above.

These chocolate chip cookie brownie bars are the ultimate dessert: chocolate chips cookies + brownies. Masons dream come true. LOL. Talk about a happy boyfriend when he gets home from work tonight.

What You Need:

- Chocolate Chip Cookie Layer -

  • 3/4 cup (1.5 sticks) unsalted butter, softened to room temperature

  • 3/4 cup packed brown sugar

  • 1/4 cup granulated sugar

  • 1 large egg, at room temperature

  • 2 teaspoons pure vanilla extract

  • 2 cups all-purpose flour

  • 2 teaspoons cornstarch

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 and 1/2 cups semi-sweet chocolate chips

- Brownie Layer -

  • 1/2 cup (1 stick) unsalted butter

  • two 4 ounce semi-sweet chocolate bars, coarsely chopped.

  • 1 cup granulated sugar

  • 3 large eggs, at room temperature

  • 1 and 1/2 teaspoons pure vanilla extract

  • 1/2 cup all-purpose flour

  • 1/4 teaspoon salt

NOTE: You can decide to buy the boxed pre measured Brownie and Chocolate Chip Cookies but let's be honest homemade will taste SOOOO much better. But time is everything so whatever you have time for will taste DELICIOUS.

Steps To Take:

- PREP -

Preheat oven to 350°F. Line the bottom and sides of a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier! I forgot to do this in the picture and cutting the was a real B**CH! DO NOT SKIP THIS). Set aside.

Make the brownie layer first:

  1. Melt the butter and semi-sweet chocolate together in a medium saucepan on medium heat, stirring constantly (about 5 minutes).

  2. Remove from heat and let cool to room temperature. This takes about 15 minutes. Use this 15 minutes to make the chocolate chip cookie layer!

  3. Whisk sugar into cooled chocolate/butter mixture until combined.

  4. Add in the eggs one at a time, whisking until smooth after each addition.

  5. Whisk in the vanilla extract, then use a rubber spatula or wooden spoon to fold in the flour and salt until combined.

Make the cookie layer:

  1. In a large bowl using a handheld mixer or stand mixer fitted with paddle attachment, cream the butter and sugars together on medium speed until combined and creamy.

  2. Beat in the egg and vanilla extract until combined.

  3. Scrape down the sides and up the bottom of the bowl as needed. Add the flour, cornstarch, baking soda, and salt.

  4. Beat on low speed until combined, then beat in the chocolate chips.

  5. Dough will be thick and sticky.

  6. Sit Aside

Final Steps:

  1. Pour brownie mix into the 9x9 baking pan we lined in the beginning.

  2. Spread it out into an even layer and then get your cookie dough.

  3. Scoop the cookie dough and drop the little balls in rows all over the brownie layer.

  4. The brownie will rise around the cookie dough as it bakes giving it a marble look.

  5. Bake the bars for 40-45 minutes, or until a toothpick inserted in the middle comes out relatively clean.

  6. Allow the bars to cool completely in the pan.

  7. Once cool, lift the parchment paper out of the pan using the overhang on the sides, then cut into squares.

  8. Cover and store leftover brownies at room temperature for up to 1 week.

So what do you think??? Will your boyfriend/hubby/kiddos love these or what?? I know mine do! This will definitely be one of my go-to desserts in our home.

Happy Baking Friends!
