The other day I was trying to think about the first things I learned to cook as a child with my mom and grandmas and this was one of the first recipes on my list — minus the instant pot. But in all honesty who has time these days to be stuck in the kitchen?? I know I don’t. Between Kenz (Our 4 year old), Lucy (Our 2 year old Pitbull), and Mason I feel like I’m always going a million miles an hour. So I had to find some sort of shortcut to cut back the cook time so I could spend more time with my family and still share my grandmas sweet recipe. So here goes...
What you need:
1/2 chopped yellow onion
2 cups Pinto Beans — DRY
2 tbsp salted butter
1/4 pound of bacon
5 cups of water
Salt & Pepper to taste
2 Tbs Minced Garlic
That REALLY is all you need! You — do not — need all that extra fluff! Yes I’m sure it tastes delicious but nothing beats Grandmas cooking. Seriously, real old fashioned New Mexico True pinto beans do not have all the extras. I know both of my grandma’s would laugh if I told them to add anything else! So stick to the recipe and you’ll be happy you didn’t stray.
Step One:
Press the — Sauté Button — on your Instant Pot and add your butter. Let it melt and add your chopped yellow onion and minced garlic.
Saute onions and butter until caramelized. Roughly 10 minutes — it’s really up to you and your tastebuds.
Step Two:
Chop up your bacon into One inch slices and add to your bacon to your pot. Simmer until cooked through (roughly 5-7 minutes). Add 3/4 cups cold water to pan leaving — sauté function on — gently scrape the bottom of the pan to de-glaze onions, garlic, bacon, and butter from the bottom.
Talk about smelling YUMMY!
Step Three:
Press your cancel button to get ready to switch over to pressure cook. Pour in your DRY pinto beans. Next, add 5 cups of water and your salt & pepper to your pot and stir.
Step Four:
Turn on the — Pressure Cook — function for 40 minutes. At the end of 40 minutes let pressure natural release. So sit back and relax and enjoy your company.
Step Five:
After natural release is done, remove the lid, and stir! Press the — Sauté Button — one more time. Let the beans boil for 10 minutes stirring occasionally.
WooHoo!! You have just successfully created the fastest pinto beans ever — that actually taste like you slaved all day over the stove just like our Grandmas did. Talk about a serious #momwin!

Shredded Carrots
Baby Cherry Tomatoes (halved)
Cheddar Cheese
Broccoli (cut small)
Dried Beet Strips
